Barista Skills

The SCA Barista Course will give you the barista training and skills you need, and provide you with a recognized qualification to either begin or further your career as a “Barista”.

The Barista Skills Foundation course focuses on the key skills required to set a grinder, make espresso and foam, and texture milk for cappuccinos. This course allows one to gain an introductory understanding of the coffee itself and set a foundation from which to build practical skills for milk technique and latte art, while implementing health and safety practices and customer service.
• Understand multiple variables and effects on espresso extraction
• Demonstrate fundamentals of consistent espresso preparation
• Gain familiarity with barista tools and machines
• Acquiring and developing milk steaming techniques and drink execution
Duration: 1 Day (including written and practical exam)

Designed to test core and advanced skills expected from a competent barista (6 months or more experience). Successful candidates should be able to calibrate their grinders, identify extraction using sensory cues, make a full range of drinks with quality and speed, free pour latte art patterns, as well as understand the requirements for equipment maintenance.
• Identify inherent characteristics of coffee and their effect on cup profile
• Organize equipment and drink production to achieve efficient workflow
• Understand extraction differences and how to correct improper balance
• Demonstrate consistent milk steaming and beverage production
• Learn the importance and basics of equipment maintenance
*Prerequisites: Barista Skills Foundation is recommended but not required. It is recommended that students have been working for at least six months in a job that requires the use of Barista skills.
Duration: 3 days (including written and practical exam)

Designed to test advanced skills and knowledge of the science behind processes used by professional baristas. Successful candidates should have a detailed understanding of their ingredients and of the techniques available to maximize the quality of the drinks made. They should be able to manage the skills of others to produce quality drinks and provide excellent customer service. They should be able to maintain their equipment to ensure continued quality.
• Formulate balance of espresso flavor by manipulating extraction.
• Demonstrate use of measurement tools to assist in monitoring the extraction process. Measure total dissolved solids, alkalinity, total hardness, and pH of water and understand how the results will influence brewing.
• Free pour latte art patterns consistently
• Adjust café layout to correct problems related to speed, efficiency, workflow and customer traffic.
• Describe the process and importance of changing water filters, cleaning and changing grinder burrs, pump pressure adjustment, rebuilding steam wand valves, and changing group head gaskets and screens.
*Prerequisites: Barista Skills Foundation is recommended but not required. Barista Skills Intermediate is mandatory before beginning Professional
